立竹密度和施肥对毛竹笋氨基酸含量的影响

摘要: 以幕阜山区毛竹林为研究对象,采用双因素完全随机区组试验设计,设置3个立竹密度和3种施肥种类,通过测定竹笋内17种氨基酸含量,比较不同经营措施条件下毛竹笋氨基酸含量差异。结果表明:立竹密度对毛竹笋氨基酸含量有显著影响。甜味氨基酸、苦味氨基酸、芳香氨基酸、人体必需氨基酸和游离氨基酸总量均随立竹密度的增加而增大,鲜味氨基酸的表现则不同,在低立竹密度(2100~2550株/hm2)条件下达到最大;毛竹笋氨基酸含量在施肥种类间无显著性差异。与CK相比,施用有机肥可显著提高芳香氨基酸含量和游离氨基酸总量;在不同的经营措施中,以立竹密度为3300~3750 株/hm2且施用配施肥时毛竹笋氨基酸含量较高;该措施可显著提高苦味氨基酸、芳香氨基酸含量和游离氨基酸总量。Abstract: The content of amino acids is an important index to measure the quality of bamboo shoots. The effects of main management measures such as the density of bamboo and fertilization on the content of amino acids of bamboo shoots were studied in order provide scientific basis for rational management of bamboo shoots forest. In this experiment, a two-factor randomized block design was adopted to determine the contents of 17 kinds of amino acids in bamboo shoots under different management measures. Three bamboo densities and three kinds of fertilization were set. The results showed that:(1) The density of bamboo had a significant effect on the amino acid content of bamboo shoots(P<0.05). The total contents of sweet amino acids, bitter amino acids, aromatic amino acids, human essential amino acids and free amino acids increased with the increase of bamboo density, but the total contents of umami amino acids were different and reached the maximum under the low bamboo density(2100~2550 plants /hm2).(2) There was no significant difference in amino acid content among different fertilization types. However, compared with the CK, application of organic fertilizer could significantly increase the content of aromatic amino acids and total free amino acids(P<0.05).(3) Among the different management measures, the amino acid content of bamboo shoots was higher when the bamboo density was 3300~3750 plants /hm2 and applied with fertilizer. Compared with the CK, the content of bitter amino acids, aromatic amino acids and total free amino acids were significantly increased(P<0.05). In the management process of bamboo shoot forest, it can be considered to increase the amino acid content of bamboo shoots mainly by regulating the bamboo density.
