ON MAKING MEDIUM-GRADE WHITE SPIRIT WITH ALCOHOL FROM DISCARD MOLASSES

  • Alcohol from discard molasses and high-grade famous spirit Wuliangye were studied by means of GC/FID. Very little organic acid and ester were found in the alcohol from discard molasses compared with Wuliangye, thus this swill tasted unsavory. After using 10ppm KMnO4 for the treatment of the alcohol from discard molasses and then distilling the liquid, intermediate runnings were collected and poured into water, and the degree of the white spirit was diluted to 54° at room temperature. Various traces of such alcohol, organic acid and ester were added to the alcohol which became a medium-grade white spirit with good color, perfume and flavor through its physical and chemical changes after storing for a month at 25-30℃. All the hygienical indexes fit into the national standards(GB-2757-81).
