ON THE QUALITY OF CHINESE GALLNUTS IN YUNNAN

  • This paper deals With the quality of Chinese gallnuts in Yunnan province.Principal factors affecting the quality of Chinese gallnuts are discussed.Tannin content and overall color are the two most important indices in determining the quality of Chinese gall-nuts.Commercially,Chinese gallnuts are grouped into three categories,i.e.Du-ensiform galls,Horned galls and Flowery-galls.Their tannin content is respectively 68.4%~72.4%,61.5%~67.7%,and 33.7%~46.1%;and their overall color 1.1,2.1and 13.5.
