Processing and Utilization of Cucurbita moschata Fruit

  • Based on analyzing the nutrition value and medicinal function of Cucurbita moschata fruit, the processing technologies for three types of Cucurbita moschata products by adopting different treatments to raw materials of Cucurbita moschata fruit were explored.It was showed by the results that it would be feasible to process serial foods including Cucurbita moschata preserves, Cucurbita moschata powder and Cucurbita moschata chips through adequate processing of Cucurbita moschata fruits.
