凹纹胡蜂食用虫态营养成分分析及其利用价值评价

AN ANALYSIS OF NUTRIENT COMPOSITIONS OF VESPA VEUTINA AURARIS AND EVALUATION OF THEIR UTILIZATION

  • 摘要: 对凹纹胡蜂(Vespa veutina auraris Smith)3种食用虫态即幼虫、蛹、成虫的水分、灰分、粗蛋白、氨基酸组成、粗脂肪及总糖含量分别进行了测定和比较。结果表明,幼虫、蛹、成虫水分含量分别为71.58%,71.43%,70.88%;粗蛋白含量分别为15.13%,17.12%,21.07%;粗脂肪及总糖含量:幼虫> 蛹> 成虫。对氨基酸组成进行比值计算,幼虫、蛹和成虫必需氨基酸占总氨基酸含量(E%)分别为36.20%,39.23%和42.48%;必需氨基酸总量与非必需氨基酸总量的比值(E/N值)依次为0.57,0.65和0.74必须氨基酸/总氮(E%/T)值为2.41,2.62和2.83.3种虫态均为较好的高蛋白质资源。

     

    Abstract: In this paper, moisture, ash, proteins, amino acids, liqid and carbohy-drates contents in three edible stages of Vespa veutina aurarisSmith were respectively measured and compared.The larva, pupa and adult of this species contained proteins of 15.13%, 17.12% and 21.07%, liqid of 7.18%, 6.97%and 4.08%, carbohydrates of 2.24%, 1.66% and 0.65% respectively.The analysis based on amino acid compositions showed that in three stages E% were 36.20%, 39.23% and 42.48%, E/N were 0.57, 0.65 and 0.74, E%/T were 2.41, 2.62 and 2.83 respectively.The result showed that the edible wasps in stages were good animal protein resources, while adult wasp as food was the best stage.
