Abstract:
We determined the basic nutrient components, mineral substance and amino acids of
Dendrocalamus giganteus shoots harvested from Menghai and Cangyuan Counties and conducted a comparative analysis with the quality and nutrient value of
Dendrocalamus bamboo species and common edible vegetables. The results showed that
D.giganteus shoots contained rich protein, total sugar and moderate crude fat, crude fiber and tannins. It was also rich in trace elements, especially the P, Mg and Ca elements were particularly high. The amino acid types were complete, and the proportions of amino acids essential for human body were comparable with those in other
Dendrocalamus bamboo species, whereas significantly higher than those in common vegetables.
D.giganteus shoots from Menghai contained higher water content, total sugar, protein content but low crude fiber and tannin, tasting better than that from Cangyuan.
D.giganteus shoots from Menghai contained higher Zn, Mn, Fe, and Mg than those from Cangyuan.
D.giganteus shoots from Cangyuan contained higher P, K and Ca than those from Menghai.
D.giganteus shoots from Menghai had complete amino acid types, but the total amino acid and essential amino acid was not richer than those of
D.giganteus shoots from Menghai.
