高丛蓝莓品种花青素含量与抗氧化能力比较

Comparitive Study on Anthocyanin Level and Antioxidant Activity Among the TallStemmed Blueberry Cultivars

  • 摘要: 对高丛蓝莓6个品种的果实花青素含量测定发现,花青素平均含量为462mg/g,其中,品种爱国者花青素含量最高,蓝丰最低。对清除DPPH自由基能力、总抗氧化能力和总还原能力的评价表明,花青素含量较高的蓝莓品种抗氧化能力较强,但在一定浓度范围内,蓝莓花青素含量与抗氧化活性间无显著相关性。综合评价表明,品种埃利奥克表现出较强的DPPH自由基清除能力和总还原能力,有较好的抗氧化效果。

     

    Abstract: The total content of anthocyanins in fruits of 6 highbush blueberry cultivars was deteremined by RPHPLC system and the results showed the average content was 4.62 mg/g, the cultivar ‘Patriot’ fruit had the highest anthocyanin content, while the cultivar ‘Bluecrop’ fruit had the lowest content. Based on the comprehensive evaluation on DPPH radical removing capacity, the total antioxidant capacity and the total reductive ability, it was concluded that the blueberry cultivars with higher level of anthocyanins had a stronger antioxidant capacity. However, there was no clear correlation between the anthocyanin content and the antioxidant capacity when the former content was under a certain level. The comprehensive evaluation indicated that the cultivar ‘Elliott’ showed the highest DPPH radical removing capacity and the highest total reductive ability, showing the best antioxidant effect among the 6 tested cultivars.
